New News

Well i know it has been a while since I blogged and i have alot of new and exciting news! for starters... I got a job!! woo hoo!! so now im doing the whole work 8 hrs a day go home and cook- clean-get everyone ready for bed act. and my daughter started school -- private christian preschool... yep i feel like we are rollin big! i finally got my new car that the hubs kept talking about! And so far the Biggest news yet--- IM PREGNANT!! yep thats right people... preggo- preggers- with child- we are more than excited! sooo that is why the blog has suffered.. (unlike anyone actually reads this- hey if ya do shoot me an e-mail! l.townsend2151@gmail.com)  Sooo new recipes... lets see.... newest yet would be--- *drum roll please* breakfast casserole!! oh em geeeeeee!! so easy so quick sooo good!

Ingredients:
1 can of cresent rolls
1 lb cooked breakfast sausage (crumbled up)
1/2 lb shredded cheese
6 raw eggs (scrambled)

1st take the cresents and unroll the whole container into the bottom of a pan (any 9x13 or smaller will work)
then take and add salt and pepper and a little milk (my secret is using a dab of sweetened condensed milk *dab being 1 tsp roughly) then pour that and the curmbled sausage in the pan over the cresents top with cheese and pop in 350 degree oven until eggs look fluffy on top and cheese is sort of melted (feel free to add more cheese if you want) when everything is done pull it out and enjoy... i usually put a little rotel with mine better than ANY omlet!!

Smothered & cover with taters? well well... wait lookie here!!

OK lady's and gents. I've got once recipe for ya this week and a new project.
so this week has been full of surprises Monday i got laid off from my job. Tuesday my husband came home and told me he was going to be gone for 3 days and 2 nights for work. and 2 of the 3 days he is going to be gone my daughter is going to her daddy's so i am going to be ALL ALONE... ugh that's great... so ill be blogging pretty regularly.
 Any ways back to the recipe for this week! i am giving away one of my most favorite dishes and i actually made it tonight... smothered pork chops (in the crock pot) with mashed potatoes! Ive seen this popping up all over the net it alot of blogs!

for the pork chops
take a package of preferably boneless put them in the crock pot on low with a can of cream of chicken (enough to cover them (mine too two cans tonight)) to make them even more creamy take the empty can and fill it 1/2 with water and 1/2 with milk then put it all in the crock pot and take a package of the hidden valley ranch seasoning mix and put in over all of it an put it on for 4-6 hours or until pork chops are done. when they finish if you have instant potatoes go ahead and cook them and leave them plain (we will get back to this) but if you have regular potatoes go ahead and get them cooked and mashed when you feel like the pork chops are ready. then add in about 1/4 c. of Parmesan cheese a SMALL dash of parsley with about 4 tbsp. of garlic powder . then enjoy!! oh my goodness this is AHHH MAZING!

 mmmm hmmmm dont it look good?! :) the pork chops just fall apart!

new project!
take a picture frame of any size... then take enough chicken wire (found at any local hardware store) and you will need to take a staple gun and fit the wire to the back of the frame and staple it tight and secure... next you will need clothes pins and you have a decorative/ vintage note keeper and also keeps up with necklaces and bracelets! great gifts!! :)

anybody can cook!

ok so ANYBODY can cook!!! dont get discouraged! if i need to start more simple than this let me know and i can adjust! we will start with a few easy recipes:
-Chicken Pot Pie
-"Wacky" Cake
-*Texas Roadhouse Butter


Lets start with the easiest of the 3:
Texas Roadhouse Butter
-2 sticks of butter (at room temperature-just set it out for a few hours until it will make an indentation at a light touch)
-1 cup of powdered sugar (confectioners sugar)
-1/2 cup of honey
-2 teaspoons of ground cinnamon


  (YUMM)
it is sooo much easier if you have a stand mixer with a wisk attachment (my wonderful husband just got me a new silver kitchenaid mixer for christmas!) i would seriously advise you to get a stand mixer if you dont have one.
1st put the sticks of butter in the mixer and drop in the sugar, cinnamon, and honey and set the wisk down in to all of it and turn it on the lowest setting while it is mixing find a jar to put the mixture into. prefferable one with a good sealable lid. Check the mixture and see if it looks mixed well (it will look grainy) im still trying to figure out how to make it as smooth as theirs but i will guarentee it is amazing the 1st time i made it i had my parents over for dinner and made it and homemade rolls and didnt have much of either left.


NEXT:
Wacky Cake! REALLY EASY CHOCOLATE (yes ladies.... i said chocolate) CAKE!
3 cups of flour
2 cups of sugar
6 tablespoons of cocoa
1 teaspoon of salt
2 teaspoons of baking soda
---mix all 5 of theese together in your mixer or mixing bowl
then slowly add in
10 tablespoons of vegetable oil (easier way of measuring this out it is 1/2 cup plus 2 tablespoons---however you feel more comfortable doing it)
2 tablespoons of vinegar
1 teaspoons of vanilla extract
2 cups of water


(more moist than you will ever believe)
As soon as all of this is mixed together and fully mixed it should look just like a box cake batter. Take and spray your pan down with pam ... or if you dont have pam take your pan and a stick of butter and just rub the butter all in it till there is a thick coat of butter on it then take a handful of flour and put it in the pan til flour sticks to all sides and bottom and all corners :) then pour in pan and bake in preheated oven at 350° and bake 35-40 minutes. you will know when its done when you can take a toothpick and stick it in the middle and pull it out when its done. Enjoy! (TIP:: if you want PRETTY icing.... and it it store bought put it in your mixer and mix it for about 2-5 minutes and it will be lighter and fluffier but wait till your cake completely cools! it makes for an easier frosting and wont tear the cake apart!)

**hey did you realize you didnt use any eggs or milk?! how awesome is this?! before too long i plan on trying to make a vanilla version! i will definatly let everyone know how this goes.**


FINALLY:
CHICKEN POT PIE!!

**FILLING**
3 chicken breast (boiled and shredded---easy way to shred it is take it from hot water and put in your mixing bowl and use the mixing paddle it will tear it apart without getting your hands dirty and burning them!)
1 can of cream of chicken
1 can of whole kernel corn
1 can of peas & carrots mixed


**TOPPING**
1 cup of flour
1 teaspoon of baking power
1 stick of butter (softened just like with the texas roadhouse butter)
1 cup of milk

 (Great Sunday Meal!)
mix all topping stuff together and set it aside

mix all the filling together and put it in an oven safe dish then put the topping on it and spread it out evenly then bake in a preheated oven at 350°  and bake until the top of the crust is a golden brown color. As soon as it is golden brown pull it out of the oven and its ready to eat! ENJOY!!!
